THE BLUNDERING CHEF: DE-BONING SALMONMy hubby and I took a cooking class at Sur La Table for his birthday, and we learned you can remove salmon bones with a pair of tweezers! Here are the details:1. The bones tend to be in a straight line, so if you find one, you can find the whole row. All you need to do is look for the little tips of bones sticking out, or run your finger along the meat near the fleshiest part, pushing your finger into the meat slightly so that you can feel the bones even if they’re below the surface.2. There tend to be about 18-20 bones in a salmon. To be sure you’ve gotten all of them, just keep testing by running your finger along the “spine” until you don’t feel any more bones.3. When you find a bone, remove it using tweezers—or pliers!

  6. noendtononsense said: To clarify the purpose of the fish deboning tweezers, they are to allow the removal of the bones with the least amount of damage to the surrounding meat. Pliers they can be very unsanitary and unprecise. The tweezers allow for speed too.
